Domaine Bila-Haut is owned by the well known Rhone Valley Oenologist, Michel Chapoutier. The name refers to an old farm villa which was built high into the mountain slopes , among some old vineyards.
The complexity of Bila-Haut reflects the diverse terroirs and wind of the Midi. By meticulously hand-harvesting the best grapes from the best vineyards of the Roussillon, a well-known Rhone producer has transformed his magic to the Languedoc and created a wine with finesse. This wine is fleshy, well-structured with aromas of black cherry and the warm and savage soils of the Roussillon area.
The plots are located on the slopes of the high Agly Valley. They are composed of gneiss and schist from the Devonian Period. Entirely destemmed. The extraction is only performed by punching of the cap. The maceration lasts from 2 to 4 weeks according to daily tastings. The wine was aged in concrete tanks and stainless steel (no oak).
